Fajita Vegetable Prep
 
Ingredients
  • ½ cauliflower - cut into florets
  • 2 portobello mushrooms - sliced
  • 1 large red onion - chopped
  • 1 red, yellow or orange bell pepper - seeded and sliced
  • 1 green bell pepper - seeded and sliced
  • 1 poblano or jalapeno pepper - seeded and sliced
Instructions
  1. Prep all the vegetables as specified in the ingredients list. Store the chopped cauliflower and mushrooms in separate containers. Store the chopped onion and all sliced peppers in one container.
