Broiled Grapefruit
 
Ingredients
  • 5 grapefruits - halved, cut around the segments with a knife (so it's easy to eat it with a spoon)
  • coconut sugar
  • cacao nibs (optional)
  • plant-based ice cream or plain plant-based yogurt (for serving)
Instructions
  1. Set your broiler to high.
  2. Arrange the grapefruit halves on a parchment-covered baking tray (you might need 2 trays, depending on the ones you have). Generously sprinkle each grapefruit with coconut sugar.
  3. Place the tray under the broiler and broil for 5-10 minutes, depending on your broiler, until the grapefruits are caramelized and slightly charred on top. Enjoy the grapefruit sprinkled with cacao nibs, with a side of ice cream or yogurt, if using. You can reheat the leftover grapefruits in the oven, or eat them cold, both ways will be good.
