- 1 teaspoon roasted and ground chicory root
- 2 soft Medjool dates - pitted
- 1⅓ cup boiling water
- 1 cup unsweetened almond milk or other plant milk
- 1 tablespoon raw cacao powder
- 2 teaspoons maca powder
- ½ tablespoon mesquite powder (optional)
- seeds of ½ vanilla bean (optional)
- 1 teaspoon coconut oil - if drinking hot (optional)
- Place chicory into a strainer or a tea bag and combine with dates in a heat-proof vessel. Pour boiling water over them and leave for 10 minutes to steep.
- Combine chicory coffee, dates, almond milk, cacao, maca, mesquite, vanilla, and coconut oil, if using, in an upright blender. Blend until smooth and frothy. Serve warm, chilled or over ice.

As a non coffee drinker who is always looking for a cozy way to start a morning, this looks fantastic. I’ve never thought of using chicory, and had no idea it was that nutritious.

Perfect recipe for today, as we woke up to a very chilly, frosty morning! I don’t drink caffeine and love all the flavors in this except I might swap the cacao for carob in this. Yum!

So nice that you found chicory roots! I have to look for it too, as I can only find ‘chicory’ powder in shops here which doens’t seem to me to be the natural ‘chicory’, but I still use to drink it mixed with some coconut cream- it makes a lovely capuccino!
Your recipe looked to me so good yesterday that I had to try it this afternoon: I used barley roots(‘orzo bimbo’, maybe you know this brand) and also added some cinnamon and it was such a lovely pleasure! Thank you!
