Sautéed Mushrooms
  • oil of choice
  • 2 large yellow onions - chopped
  • sea salt
  • 2 lbs any mushrooms of choice (we used a mix of crimini and shiitake) - sliced
  • 3 cloves of garlic - minced
  1. Heat a generous glug of oil in large sauté pan over medium heat. Add the onions and a pinch of salt, and cook for about 10 minutes, until translucent. Add the mushrooms and another pinch of salt. If your large pan is still not large enough to fit all the mushrooms, add them in batches, they will cook down significantly. Cook for another 10-15 minutes, adding the garlic about halfway, until all the liquid released by the mushrooms evaporates. Store refrigerated in an air-tight container.
