Marinated Mung Beans
  • 3½ cups cooked mung beans (from above)
  • 3-5 garlic cloves - minced
  • ¼ - ½ cups finely chopped herbs - dill and/or parsley
  • juice from 1 large or 2 small lemons
  • 2 tablespoons olive oil
  • sea salt and freshly ground black pepper
  1. Combine the beans, garlic, herbs, lemon juice, olive oil, salt and pepper to taste in a large bowl. Toss well and store refrigerated in an air-tight container.
