Floridian berry season is upon us. We got some strawberries from a patch that ended up being all bruised up, so I decided to turn them into raw strawberry preserve. It’s quite simple, just blend the berries with some agave syrup or honey to taste and dehydrate until leathery. You can eat it as fruit leather (which Paloma loves), or blend again with a little water to achieve a jam-like consistency.

Hi Anya! You will need a dehydrator to make this preserve. If you have one, puree the berries in a blender until smooth. The original recipe does not have any sweetener in it, but I added some because the strawberries were pretty tasteless. If you decide to sweeten, just add some agave syrup or honey to make it as sweet as you prefer. Spread the mass onto dehydrator sheets (pictured) thickly and dehydrate at 115 degrees until leathery. You can eat this as fruit leather or go on to make the “jam.” Soak the leather in filtered water for two hours. Carefully strain out the water. Blend the mass in a processor again, adding as much water as needed to make a jam like consistency. You could technically make this in an oven – if you set it at 115 degrees, it would still remain raw. But you would have to find something to spread the mass onto. Hope this helps!
