Hey friends, we’re starting a cookbook club, and we have a huge giveaway for you from the amazing kitchen supply online shop, Pleasant Hill Grain! We’ve been hearing about these book clubs, where a group of friends cook from the same cookbook over some period of time, and then bring their favorite dish to a joined potluck at the end. So we thought, why not do something similar digitally? We are always looking to connect with you more, beyond the facade of this blog, and we thought this would be a really great way to do that.
We invite you to cook a few seasonal recipes from our cookbook, Simply Vibrant alongside us and share the results. Four of the book club participants will win the giveaway from Pleasant Hill Grain, so the chances of winning are pretty big. Read on to learn how to participate in the book club and enter the giveaway :)

How to Enter the Book Club & Giveaway
1) Cook at least 1 seasonal recipe from Simply Vibrant, take a picture of the results, and share on Instagram or Facebook under the hashtag #SimplyVibrantBookClub. This will automatically enter you into the giveaway. Each new post (with a photo of a new dish) under the hashtag counts as a new giveaway entry, and you can enter yourself as many times as you want. It’s spring where we live now, so we will be focusing on cooking spring recipes for the book club, but if you live in a different part of the world, feel free to cook any recipes from the book that are seasonal for you. You’ll have until June 16th, 2018 to enter.
2) Follow @pleasanthillgrain and @golubkakitchen on Instagram and/or Facebook.
3) The winners will be announced on June 17th, 2018. All the participants’ names will be entered into a spreadsheet and the winners will be picked at random on our Instagram Stories. Remember that each new post under the hashtag #SimplyVibrantBookClub counts as a new giveaway entry, and you can enter yourself as many times as you want. The giveaway prizes are gift cards to Pleasant Hill Grain: 1x $150 gift card and 3x $100 gift cards. There will be 4 winners total. The giveaway is open worldwide.

What We’re Cooking
We are cooking 3 spring recipes from the cookbook alongside you: the Strawberry and Rhubarb Oven Pancake (pg. 26), Spring Vegetable Chowder (pg. 116), and Spring Vegetable Black Rice Pilaf (pg. 152). We will be demonstrating the cooking process for all three of those dishes on our Instagram Stories, and we are sharing those stories from Instragram below as well. You can choose to cook and share these same dishes or you can cook any other ones that you are interested in from the book to participate in the book club.
Strawberry and Rhubarb Oven Pancake (pg. 26)
This pancake is vegan, made with spelt flour, and combines strawberries and rhubarb, which are a match made in heaven. It doesn’t require any frying, as it bakes in the oven, and it’s very easy to make (see for yourself in the Instagram story above :).
Spring Vegetable Chowder (pg. 116)
This chowder is the perfect soup for transitional spring weather. It’s warm and comforting, but full of tender spring greens and creamy new potatoes.
Spring Vegetable Black Rice Pilaf (pg. 152)
I can’t say enough about this one-pan pilaf. It’s made with simple ingredients, but they all come together beautifully. There’s sweet and aromatic notes from the black rice, zing from lime juice, and plenty of green power from asparagus, peas, and spinach.
