Tomatoes are everywhere right now, every color and shape imaginable, and tasting like the most concentrated sunshine. This abundance always feels a little bittersweet, knowing that they will be gone as fast as they came, and that we’ll be moving on to heartier fall fare like squashes and roots soon enough. While they last though, it’s a very good idea to incorporate tomatoes into every meal imaginable. Today we’re sharing a round-up of our favorite tomato-centric recipes that we’ve posted over the years <3
Vegan Caprese Salad (v, gf)
Have you tried Elenore’s cashew mozzarella yet?! It’s incredible, easy to make, and able to please even the biggest dairy lovers. This is the kind of non-recipe recipe that August tomatoes do so well in. Slice up some ripe, juicy tomatoes, layer them with the cashew mozzarella, sprinkle with salt, basil, and balsamic or a balsamic reduction, and you’re done. So good!
Red Lentil Gazpacho (v, gf)
This is a heartier take on gazpacho that includes red lentils in the mix of traditional gazpacho vegetables. It’s vibrant and refreshing, but also able to hold its own as a light summer meal.
Grain-Free Tomato Tart with Cauliflower Ricotta (v, gf)
This is what our savory tart dreams are made of. The crust is very simple, made with just almond flour, and the cauliflower ricotta is perfectly fluffy. AND of course, the crown of caramelized, juicy summer tomatoes is key.
Barley Tomato Salad (v)
This is an oldie but a goodie. A hearty grain salad that features slow-roasted tomatoes and tons of fresh herbs. It keeps well, and the leftovers taste incredible.
No-Cook Marinara Sauce (v, gf)
In case you missed this recipe from the other week, it’s perfectly lazy and worth a try. We discovered this no-cook marinara sauce method back in our raw food days, and we’ve been making this sauce every summer since. It tastes great served with zoodles, regular pasta, and even cold pasta salad.
Summer Vegetable Sauté (v, gf)
This is a well-loved recipe, inspired by the region we come from in Russia, the Caucasus Mountains. The cooking there is bolder and brighter than typical Russian cuisine, favoring lots of herbs, spices, and garlic. This sauté is packed with large chunks of eggplant, peppers, onions, and tomatoes that typically get cooked whole to preserve all of their juices. This kind of thing tastes amazing made on a grill (or over an open fire!), but for those of us without an outdoor cooking space, this recipe offers tips for sautéing.
Romesco Pasta with Cauliflower and Blistered Tomatoes (v, gfo)
Have you made romesco yet? It’s a deliciously life-changing sauce. It’s perfect for the summer too, since it calls for summer produce like tomatoes and peppers. This pasta comes dressed with romesco (you can easily use regular almonds instead of sprouted like the recipe calls for) and punctuated with chunks of caramelized cauliflower + tomatoes. It’s summer comfort in a bowl for sure.
Simple Spicy Strawberry Gazpacho (v, gf)
Another fun variation on gazpacho! This one includes strawberries for a little fruity sweetness, as well as a little kick from some chilis.
